You do not know what you are talking about. It was not dirty to begin with, that's how the metal looks after it has been used for a long time. You will see Indian Towa pans made out of a similar metal become this colouration over time. Second, to some extent you do want stuff to stick to the pan. The bits that stick undergo continued browning/Maillard reaction and are known as the fond. You deglaze the fond with liquid, which can be seen happening later on in the video. The fond forms the foundation of the pan sauce and is very important for its flavour.
